Description
A real specialty! The leaves of the plant are harvested from August to October. The leaves are dried in the fresh state in the sun and then sprayed with water again. Then they are fermented in wooden vessels for about 24 hours and then rolled and dried. The freshly harvested leaves contain glucosides, which are converted into the substance phyllodulcin during fermentation and this is how the sweet taste with a light aniseed note develops.
